Chocolate Chip Cookies

These Cookies are truly the BEST cookies! They have crispy golden edges and a soft chewy inside. Dotted with chocolate chips, these cookies are crave worthy. They are nut free, easy to make and even easier to devour!

Ingredients

  • 60 g coconut sugar
  • 10 g flax seeds
  • ¼ tsp vanilla
  • 30 ml coconut oil melted
  • 80 ml plant based milk
  • 1 pinch salt
  • 150 g spelt flour
  • ½ tsp baking soda
  • 50 g (vegan) dark chocolate chips

Instructions

  • Preheaten oven to 160 degrees celsius
  • Give in a large bowl 60g coconut sugar, 10g flax seeds, ¼ tsp vanilla and 30ml melted coconut oil and wisk it with a wisk together. Then add 80ml plant based milk, 1 pinch of salt, 150g spelt flour and ½tsp baking soda. Mix it until a homogeneous batter is formed
  • Fold the chocolate into the batter. Lay out baking paper on a baking tray and by using an ice cream scoop, place the cookie batter on each one and press it a little flat. Put them in the oven for 10-15 minutes.
  • When they are done, remove them from the oven and let them cool to firm up.
