Chocolate Chip Cookies

Ingredients
- 60 g coconut sugar
- 10 g flax seeds
- ¼ tsp vanilla
- 30 ml coconut oil melted
- 80 ml plant based milk
- 1 pinch salt
- 150 g spelt flour
- ½ tsp baking soda
- 50 g (vegan) dark chocolate chips
Instructions
- Preheaten oven to 160 degrees celsius
- Give in a large bowl 60g coconut sugar, 10g flax seeds, ¼ tsp vanilla and 30ml melted coconut oil and wisk it with a wisk together. Then add 80ml plant based milk, 1 pinch of salt, 150g spelt flour and ½tsp baking soda. Mix it until a homogeneous batter is formed
- Fold the chocolate into the batter. Lay out baking paper on a baking tray and by using an ice cream scoop, place the cookie batter on each one and press it a little flat. Put them in the oven for 10-15 minutes.
- When they are done, remove them from the oven and let them cool to firm up.
