This green Broccoli Soup consists mostly out of frozen ingredients, which means there’s very little prep work involved that makes it the perfect quick and easy lunch or dinner. In the last couple of weeks I’ve become such a soup addict because of the cold, unusual summer weather here in Germany and this soup has become one of my favorites

Peas are a good source of vegetable protein. There are about eight grams of protein in 150 grams of green peas. The protein content is even higher in dried peas. While the raw form consists of a maximum of seven percent protein, the protein content increases to more than twenty percent after drying.
Peas also contain essential amino acids. These are essential for the human body, as it cannot produce them itself. The fact that peas are healthy is also due to the fact that they contain many vitamins. Besides beta-carotene, peas are particularly rich in B vitamins and also contain vitamin C. Peas can also be rich in minerals. The pea also scores with minerals: Magnesium, iron, calcium and zinc make them a particularly healthy vegetable side dish.

Green Broccoli Soup
Ingredients
- 50 g frozen broccoli
- 90 g frozen peas
- 30 g frozen spinach
- 50 g Cashews
- 350 ml vegetable stock
- 1 glove garlic
- ½ onion
- 5 ml lemon juice
- 1 tsp nutritional yeast
- Salt & Pepper
Instructions
- Add 50g frozen broccoli, 90g frozen peas, 30g frozen spinach, 50g Cashews and 350ml vegetable stock into a soucepan or top and let it simmer for about 10 minutes.
- Meanwhile peel the garlic glove and the ½ onion and chop them roughly. Squeze half a lemon and set it aside. If you want to top your soup like in the picture, prepeare some extra peas in a soucepan
- Once the 10 minutes are up, transfer the contents of the pot or pan to a large blender and add the garlic glove and onion (step 2), as well as the nutritional yeast and some salt and pepper. Blend until smooth.
- Now it's time to taste your soup and adjust the seasoning. I used 5ml lemon juice as well. It's most likely that you'll need more salt and pepper depending on how salted your vegetable stock is, but be careful that you're not over salting your soup.
- Top your soup as desired. I used some extra peas (step 2), vegan Yoghurt and Apfel-Basalmico!
