Coconut Bar

This 5 ingredient coconut bar has been one of my favorite recipes ever! I believe theses bars were one of my first recipes I’ve posted and I am still in love with them! They require a lot of inactive time in the freezer and fridge but it’s totally worth it! Once you have started, you can’t stop eatin’ them : )

Basic Health facts: Coconut

A coconut consists of 36 percent fats, mainly saturated fatty acids. Besides caprylic and capric acid, coconut contains a large amount of lauric acid. This has a particularly positive effect on the immune system. This is because the antimicrobial and antiviral effect of lauric acid thus frees the body from numerous pathogens. In contrast to animal fat, coconut fats are not long-chain but medium-chain. The so-called medium-chain triglycerides (MCD) can be broken down relatively quickly by the body and prevent cravings. Since they are not stored as body fat, but are immediately converted into energy, it is therefore super helpful in losing weight. Coconut is also so healthy because it lowers cholesterol levels. The MTCs are also responsible for this. They reduce both total cholesterol and LDL cholesterol. Perfect conditions for a healthy cardiovascular system. Tip: Try a coconut-chocolate smoothie!

Coconut Bars

Ingredients

  • 300 g (vegan) Yoghurt e.g. Coconut Yoghurt
  • 25 g Coconut flakes
  • 30 g oats
  • 35 ml Agave syrup
  • 100 g (vegan) dark Chocolate

Instructions

  • First, put 300g of (vegan) yoghurt in a bowl with 25g of coconut flakes, 30g of oats and 35ml of agave syrup and mix all the ingredients together. Put the bowl for 5-10 minutes into the freezer.
  • Then place baking paper on a plate and put about 1 tbsp of your coconut mixture on it and shape it with your fingers (you can also use a mould) into a bar. I used two CLEANED geometric triangles (Geodreick) to achieve straight corners, but you can also use everything else to achieve straight corners - it just has to be clean
  • Once you have formed all the coconut mixture into about 6-7 bars, carefully place the plate in the freezer.
  • After about 2 hours (or as soon as the bars are almost frozen) melt 100g (vegan) dark chocolate over a water bath or in the microwave. Take the coconut bars out of the freezer. They should now be firmer and release from the baking paper without collapsing (if they are still quite 'soft', be sure to put them back in the freezer until they are firmer!)
  • Now cover the bars with the melted chocolate. I coated them over a grid and then melted the remains again so that no chocolate was "wasted".
  • Now place the bars in the fridge for at least half an hour so that the bars can defrost again inside. Enjoy : )
