Oceanic Chia Pudding

Chia pudding is a delicious, simple meal that you can easily meal-prep as a healthy breakfast, snack, or dessert. You can also customize it in a variety of delicious ways. Within this particular easy layered chia pudding, I’ve used a mixture of blue and white Chia Pudding and a Coconut Joghurt Layer which just tastes amazing. This is a rather a basic recipe with only 4 ingredients and toppings. 

 

I love to prep my Chia Pudding the night before, because then it has a thick creamy consistency 

But what is Spirulina? 

Spirulina is usually referred to as a blue-green algae, but it is actually a cyanobacterium. Cyanobacteria get their name because of the bluish pigment phycocyanin, which they use to capture light for photosynthesis. Therefore, Spirulina also contains chlorophyll.

Superfood

While this blue-green algae may look like slimy pondweed, it is actually one of the most nutrient-dense foods on the planet. Spirulina is 60% protein (more than twice as much as red meat). It contains 18 amino acids, including all essential amino acids and 10 of 12 non-essential amino acidsit. Furthermore it’s a sustainable food source. In addition to using 10 times less water to produce than other vegetables, spirulina can be harvested year-round and withstands extreme temperatures.

Ingredients

Chia Pudding

  • 30 g Chiaseeds
  • 250 ml Oat milk (or any other plant milk)
  • ½ tsp blue Spirulina
  • 50 g Coconut Yoghurt

Toppings

  • 4 blackbeeries
  • handfull blueberries

Instructions

  • In a medium bowl whisk together 30g chiaseeds, 250ml Oat milk. (with a whisk.)
  • Put half of the chia pudding in another bowl and add spirulina to it. Stir well again and put both bowls (one white, one blue) in the fridge for at least 4 hours. However, it is better to leave the chia pudding in the fridge overnight.
  • Now it's time to layer the Chiapudding. Layer the blue layer into your mason jars first. I used around a Tablespoon. Then add to one side of the jar a tablespoon of Coconut Yoghurt and next to it again a bit of the blue Chia Pudding. On top of it the white Chiapudding. Go on by layering another tablespoon of Coconut Yoghurt on the other side and fill the jar up with the rest of the blue Chiapudding.
  • Lastly top with whatever you want. I used some frozen black- and blueberries
