Berry Smoothie Bowl

This Red Berry Chia Smoothie is made with a blend of fruits like blueberries and raspberries and is packed with fibre and protein! Loaded with fresh fruits & super seeds, it’ll keep you energized all morning long!

I definitely recommend buying bananas, peeling them, and freezing them in ziplock bags. Same goes for raspberries. (Trust me, you’ll thank me later when you’re too busy to do groceries and remember you have a bunch of fruit ready to go in the freezer.)

Basic Health facts

The edible pomegranate seeds are packed with health-promoting ingredients, including vitamins C and K, folate and fibre. Polyphenols are also abundant, especially flavonoids and tannins.

These bioactive substances have an antioxidant effect and protect the body’s cells from harmful influences, slow down the ageing process and have an anti-inflammatory effect.

Ingredients

Smoothie Bowl

  • 50 g frozen mango
  • 50 g frozen blueberries
  • 50 g frozen raspberries
  • 50 g (frozen) pomegranate seeds
  • 1 frozen Banana
  • 100 g frozen Coconut Yoghurt
  • 1 tbsp chia or flax seeds
  • ¼ tsp vanila

Toppings

  • 1 strawberry
  • 1 tbsp coconut chips
  • frozen blueberries
  • 1 tsp Pumpkin Seeds

Instructions

  • If you have a low-powered blender, take your frozen ingredients out of the freezer for 10 minutes so they can defrost a little.
  • Put all the frozen ingredients - 50g mango, 50g blueberries, 50g raspberries, 50g pomegranate seeds and banana - into a blender with 100g coconut yoghurt. If you like a more liquid consistency, just add a dash of plant milk.
  • Blend all of this together into a creamy smoothie. Now you can flavour your smoothie with vanilla to taste. I used ¼ tsp of ground vanilla bean for this recipe
  • Finally, pour the smoothie into a bowl and garnish with, for example, berries, nuts, coconut chips,...
    If the consistency is too "icy" for you, leave your smoothie bowl at room temperature for 5 minutes before eating.

Notes

(Frozen) pomegranate seeds should be available in almost every supermarket. Alternatively, you can use 2 tablespoons of chia or flax seeds. However, I would recommend you to make the recipe with pomegranate seeds, because they make the bowl so special 🙂
