Ingredients

Smoothie Bowl

  • 50 g frozen mango
  • 50 g frozen blueberries
  • 50 g frozen raspberries
  • 50 g (frozen) pomegranate seeds
  • 1 frozen Banana
  • 100 g frozen Coconut Yoghurt
  • 1 tbsp chia or flax seeds
  • ¼ tsp vanila

Toppings

  • 1 strawberry
  • 1 tbsp coconut chips
  • frozen blueberries
  • 1 tsp Pumpkin Seeds

Instructions

  • If you have a low-powered blender, take your frozen ingredients out of the freezer for 10 minutes so they can defrost a little.
  • Put all the frozen ingredients - 50g mango, 50g blueberries, 50g raspberries, 50g pomegranate seeds and banana - into a blender with 100g coconut yoghurt. If you like a more liquid consistency, just add a dash of plant milk.
  • Blend all of this together into a creamy smoothie. Now you can flavour your smoothie with vanilla to taste. I used ¼ tsp of ground vanilla bean for this recipe
  • Finally, pour the smoothie into a bowl and garnish with, for example, berries, nuts, coconut chips,...
    If the consistency is too "icy" for you, leave your smoothie bowl at room temperature for 5 minutes before eating.

Notes

(Frozen) pomegranate seeds should be available in almost every supermarket. Alternatively, you can use 2 tablespoons of chia or flax seeds. However, I would recommend you to make the recipe with pomegranate seeds, because they make the bowl so special :)
