Is Tofu bad for the environment?

Nothing and no one is solely to blame for the fact that the rainforest is being cleared. Not the South American farmer who converts grassland or forest into farmland, not a country’s government, not a multinational agricultural corporation, not global economic relations, not the consumers of products like tofu made from the bean. It is all of them together.

All of them together have ensured that Brazil has doubled its acreage in the past 15 years and now produces almost 90 million tonnes of soy annually. Mostly for export. To Germany, for example.

Here the soybeans end up in all kinds of products. Among other things, in cooking oils, chocolate, biscuits, ice cream, but also in biofuels, lubricating oil, printing ink, foils, cigarette filters, skin creams or medicines. It is impossible to imagine the consumer world of the industrialised nations without soybeans. And no one who is not self-sufficient has an overview of how much soy they actually consume.

By far the largest share of our soy imports, more than 80 percent, does not end up in vegetarian snacks, however – but in protein-rich feed for industrial animal fattening. And this is problematic in several respects.

In the countries of origin, it is not only grassland and rainforest that are being transformed into arable deserts. Almost exclusively (90 per cent) genetically modified plants are now used, including massive use of glyphosate.

Tofu Rice Bowl

Ingredients

  • 75 g sushi or jasmin rice

Tofu

  • 175 g smoked tofu
  • ½ tbsp corn starch
  • 1 tbsp avocado or seasam oil

Sauce

  • 50 ml vegetable stock/broth
  • 2 tsp soy sauce
  • 1 tsp mable syrup
  • 1 tsp srirascha
  • 1 tsp rice vinegar

Toppings

  • edamame cooked according to package directions
  • ¼ cucumber
  • ½ avocado
  • ½ green apple
  • peanuts or seasam

Instructions

  • Cook the sushi or jasmin rice according to package directions
  • Meanwhile cook your edamame, slice your avocado and dice your cucumber and the green apple. Squeeze all the water out of the tofu and cut it into cubes then toss the tofu and the ½ tbsp cornstarch together until evenly coated.
  • 8 Minutes before your rice is finished, heat up the oil in a non-stick pan on medium-high heat and add the tofu and let cook for 4-5 minutes on each side until crispy.
  • Prepeare the sauce in the meantime: Add 50ml vegetable stock/broth, 2tsp soy sauce, 1 tsp mable syrup, 1 tsp sriracha and 1 tsp rice vinegar in a large container/bowl and whisk it together with a wisk.
  • Add the sauce to the tofu and let it cook for about 2-3 minutes, until the sauce has thickened.
  • Place the rice at the bottom of your bowl, add cucumber, apple, edamame, tofu, avocado and some peanuts. If it's to "dry" for you, add some soy sauce.
