Cook the sushi or jasmin rice according to package directions
Meanwhile cook your edamame, slice your avocado and dice your cucumber and the green apple. Squeeze all the water out of the tofu and cut it into cubes then toss the tofu and the ½ tbsp cornstarch together until evenly coated.
8 Minutes before your rice is finished, heat up the oil in a non-stick pan on medium-high heat and add the tofu and let cook for 4-5 minutes on each side until crispy.
Prepeare the sauce in the meantime: Add 50ml vegetable stock/broth, 2tsp soy sauce, 1 tsp mable syrup, 1 tsp sriracha and 1 tsp rice vinegar in a large container/bowl and whisk it together with a wisk.
Add the sauce to the tofu and let it cook for about 2-3 minutes, until the sauce has thickened.
Place the rice at the bottom of your bowl, add cucumber, apple, edamame, tofu, avocado and some peanuts. If it's to "dry" for you, add some soy sauce.
