Blueberry Overnight Oats

This Recipe is inspired by my “Blackberries Baked Oats” because I looooved the combination of lemon and berries but since school started again, I can’t make myself baked oats in the morning anymore,  instead I always take overnight oats with me. I have to say that I like this version of oats a little better than the baked oats ; )
Oats:

Rolled oats are a local superfood. Oats are also considered the most valuable grain in our diet. The fibre and complex carbohydrates make oats a superstar. The grain is grown as seed oats and is one of our staple foods. Rolled oats are a whole grain because they are made from the whole grain and only non-edible parts are removed.

 
Basic Health facts

40 grams of oats contain 0.3 mg of vitamin B1, which would cover a quarter of the daily requirement. No other grain has such a high B1 content as oats. And even among the Pseudo-cereals, only amaranth can surpass oats in terms of B1 – but only just.

Vitamin B1, together with B6, is THE nerve vitamin par excellence, so that a deficiency can manifest itself in dizziness, insomnia, fatigue and neurological disorders (e.g. neuritis).

Blueberry Overnight Oats

Ingredients

  • 35 g oats
  • 5 g shredded coconut
  • ¼ tsp vanilla
  • 1 pinch of salt
  • ¼ tsp lemon zest fresh
  • 150 ml oat milk
  • 30 g (vegan) yoghurt e.g. coconut yoghurt
  • 10 ml agave syrup
  • blueberries

Instructions

  • Add 35g of oats 5g shredded coconut, ¼tsp vanilla, 1 pinch of salt, ¼ tsp fresh lemon zest, 150ml of oat milk, 30g (vegan) yoghurt and 10ml agave syrup to a bowl or a large jar and mix together.
  • Cover the bowl or the jar and place it for at least 4 hours (best is ofc over night) into the fridge.
  • Remove the overnight oats from the fridge, wash your blueberries and top the overnight oats with them. I like to prep my oats on a Sunday so I don't have to make myself breakfast on Mondays and Tuesdays 🙂
