Banana Pancakes

I’ve never been much of a pancake lover, but ever since I created this recipe by accident, I’ve been eating pancakes at least once a week! I opted for a basic pancake batter, in which you can then add options such as chocolate, cocoa or peanut butter, depending on your preferences

The banana is one of the oldest cultivated plants in the world and already found its way from Southeast Asia via Africa to Europe and South America in the 15th century – whose countries are even among the biggest exporters of the sweet fruit today. The word ‘banana’ comes from Arabic and means finger.  From a purely botanical point of view, bananas are berries. Hard to imagine because of the shape, but all fruits that arise from a single ovary are called berries.
 
Bananas: good for sport?

Among athletes, bananas are especially popular for how quickly they provide new energy, as the sugar molecules in ripe bananas are extremely easy to utilise. According to studies, two bananas give enough energy for a 90-minute workout and are even said to be healthy alternatives to sports drinks. Bananas are also ideal as an after-workout snack, as the proteins they contain help build muscle and improve recovery. No wonder the banana is the number one fruit among all top athletes

Banana Pancakes

Ingredients

Basic batter

  • 1 banana
  • 70 g spelt flour
  • 80 ml plant based milk
  • ½ tsp baking powder
  • ¼ tsp baking soda

Extras

  • 1 tsp peanut butter
  • 1 tsp cocoa powder
  • (vegan) chocolate chips
  • ...

Instructions

  • In a bowl, mash the banana with a fork
  • For the basic batter, add 70g spelt flour, 80ml plant based milk, 1/2 tsp baking powder and, if you want the pancakes to be fluffier, 1/4 tsp baking soda to the banana and mix well, to form a homogeneous batter. 
  • Either bake the pancakes with the basic batter or add peanut butter, cocoa, chocolate,... as desired. You may need to add a dash of oat milk
  • Heat a frying pan over medium heat and add coconut oil. Now pour about 1-2 tbsp of batter per pancake into the pan and bake for about 1-2 minutes until small bubbles form. Carefully turn over and bake for another 1-2 minutes on the other side.
  • Decorate the banana pancakes as desired : )
