In a bowl, mash the banana with a fork
For the basic batter, add 70g spelt flour, 80ml plant based milk, 1/2 tsp baking powder and, if you want the pancakes to be fluffier, 1/4 tsp baking soda to the banana and mix well, to form a homogeneous batter.
Either bake the pancakes with the basic batter or add peanut butter, cocoa, chocolate,... as desired. You may need to add a dash of oat milk
Heat a frying pan over medium heat and add coconut oil. Now pour about 1-2 tbsp of batter per pancake into the pan and bake for about 1-2 minutes until small bubbles form. Carefully turn over and bake for another 1-2 minutes on the other side.
Decorate the banana pancakes as desired : )
