Kiwi Yoghurt

Fancy a little upgrade of your yogurts? I’ve seen this yoghurt creation on instagram by the lovely “heerlijkehappen” and had to make my own version of it. I mean look at this! How can something look this delicious?
Where do Kiwis come from?

Kiwi plants originally come from East Asia. They arrived in New Zealand at the beginning of the 20th century, where they were successfully cultivated. Farmers there have been growing it commercially since the 1930s. But it was not until the 1960s that it was named after New Zealand’s national bird, the kiwi, to boost exports.

 
Basic Health facts

Especially the high vitamin C content of the fruits is remarkable. It is almost twice as high as in oranges or lemons. This means that kiwis are particularly good at strengthening our immune system. Just one and a half kiwis cover an adult’s daily requirement of 100 milligrams of vitamin C.

In addition, a 2011 study found that kiwis also contribute to healthy sleep.

Kiwi Yoghurt

Ingredients

  • 2 Kiwis
  • 200 g (vegan) yoghurt e.g. coconut yoghurt
  • 30 g (vegan) cream cheese
  • 1 tsp agave syrup

Instructions

  • Remove the pulp from the kiwi and, using a small blender, blend to a kiwi puree until a smooth green mixture is obtained.
  • In a bowl, mix 200g (vegan) yoghurt, 30g (vegan) cream cheese and 1 tsp agave syrup.
  • First pour 1/3 of the yoghurt mixture into a glass. Then carefully pour half of the kiwi mixture on top. Then another yoghurt layer, a kiwi layer and finally the rest of the yoghurt on top.
  • To make the pattern, gently run the handle of a spoon down the glass. Then quickly pull it into the centre and take the spoon out again. Repeat this.
  • Top it as desired. I used more Kiwi, pinapple and some red berries.
