Origin of peanut butter:
Peanut butter was actually invented by the Aztecs, even if it didn’t quite correspond to today’s version. As we know them, four men developed peanut butter independently in the late 18th and early 19th centuries: Marcellus Gilmore Edson from Canada and the three Americans Dr. John Harvey Kelloggs, Dr. Ambrose Straub and Joseph Rosefield.

Ingredients
- 100 g spelt flour
- 1 tbsp oats
- 25 g coconut sugar
- ½ tsp baking powder
- ½ tsp baking soda
- 50 g peanut butter creamy
- 10 ml coconut oil melted
- 50 ml plant based milk
- 30 ml maple syrup
Filling
- 20 g banana very ripe
- 15 g peanut butter
- 1 pinch salt
- 2 tsp maple syrup
- ⅓ tsp cinnamon
Instructions
- preheat the oven to 180 degrees top/bottom heat.
- Mix 100g spelt flour, 1 tbsp oats, 25g coconut sugar, 1/2 tsp baking powder and 1/2 tsp baking soda in a bowl together.
- add 50g peanut butter, 10ml coconut oil, 50ml plant milk and 30ml maple syrup to the dry ingredients and knead into a dough
- In a separate bowl, mash 20g banana, add 15g peanut butter, 1 pinch of salt, 1/3 tsp cinnamon and 2 tsp maple syrup and mix well, until combined.
- Form small balls from the dough and place them on a baking tray lined with baking paper and press a small hollow into the slightly flattened dough balls. Now pour about 1 tsp of the peanut-banana mixture (step 4) into the well.
- Place the cookies in the oven for approx. 10-12 minutes and leave to cool.
