Honestly, the best Ice Cream I’ve made! It is made from only 5 ingredients and takes less than 5 minutes (without the freezing time) which makes it the perfekt Summer Snack/dessert to cool you down. From the consistency it’s more like real ice cream instead of a smoothie consistency!

Difference between medjool and other dates
The Medjool date is the most popular of all date varieties and is also called the queen of dates. At around 6 cm, it is larger than other types such as Deglet Nour, and is also particularly juicy and very soft. Its distinctive natural sweetness makes it a good alternative to industrial sugar.

Cashew Ice Cream
Ingredients
- 150 ml Oat Milk
- 3 Medjool dates pitted
- 100 g Cashew butter
- 1 pinch salt
- ½ tsp blue spirulina optional
Instructions
- Add 150ml oat milk, 3 medjool dates, 100g Cashewbutter, 1 pinch of salt and optional ½ tsp spirulina to a blender and blend until smooth. I like to have some date pices in my ice cream so I am not blending it too much, but it's up to you!
- Transfer it to a mug/cup (wherever you want to have your ice cream in) and put it for at least for 5 hours in the freezer so it can freeze. Best is overnight though.
- Before you serve the ice cream, take it out of the freezer 10-15 minutes beforehand so that it can thaw a little.
