Carrot Cheesecake Balls

I am SUPER excited about these Carrot Cheesecake Balls. I have always loved cheesecake and cake pops since they are so rich and creamy. But wouldn’t it be boring to just have “normal” Cake pops? So I decided to try using vegetables and well…they all turned out horrible… until I tried it with carrot and OMG I love it sooo much! I hope you guys love it as much as I do because I can’t get enough of them šŸ™‚
Carrots:
Carrots should always be prepared with a little fat. This is pointed out by the Federal Association of Fruit and Vegetable Producersā€˜ Organisations (BVEO) in Berlin. Only by adding fat can the body absorb the carotene from the vegetable and convert it into vitamin A.

Basic Health facts: Carrot

Besides energy, fibre and low calories, carrots are healthy because they are an excellent source of vitamins and minerals. Especially vitamin A and biotin are worth mentioning here. Carrots are rich in beta-carotene, which is converted into vitamin A in the body.

Carrot Cheesecake Balls

Ingredients

  • 40 g Cashews unsalted
  • 30 g Oats
  • 30 g Carrot peeled
  • ¼ tsp vanilla
  • 80 g (vegan) cream cheese
  • 1 tsp nut butter I used Cashew
  • 3 tsp agave syrup

Topping

  • 70 g (vegan) white chocolate
  • 5 g dark (vegan) chocolate
  • 5 g carrot

Instructions

  • Blend 40g of cashews and 30g of oats in a small blender for a few seconds to a flour consistency and transfer into a medium bowl.
  • Grate theĀ carrot. If you don't have a grater at home, blend theĀ carrotĀ in the blender for a few seconds (but there should still be pieces).
  • Add ¼ tsp Vanilla, 30gĀ CarrotĀ (Step 2), 80g vegan cream cheese, 1 tsp nutbutter and 3tsp agave syrup and give it a good mix with a spatula (it can take a few minutes).
  • Take 1 ½ teaspoon of dough and form into small balls between the palms of your hands and and place the balls on a plate with baking parchment. Put it for 5 Minutes into the freezer
  • While the balls are in the freezer chop 70g (vegan) white chocolate into small pieces and melt in the microwave or in a pot on the cooker over medium heat.Ā 
  • Take the balls out of the freezer and place them one by one in the melted chocolate so that the balls are surrounded by chocolate on each side. Allow to drip for a few seconds and return to the plate with baking paper.Ā 
  • If you want, melt some dark chocolate and drizzle it over the white chocolate and sprinkle them with a fewĀ carrotĀ grates
  • Put in the fridge for a few minutes so that the chocolate becomes firm and voilĆ” the hopefully bestĀ carrotĀ Cheesecake BallsĀ

    Uhm excuse me?! How delicious is this please?
    I’ve just done it and : Explosion in my mouth! For sure it is a power praline because I couldn’t eat so many but I’ve still eaten all of them! Love taking them with me to school, eventhough they get warm and the chocolate is melting, but still they are A M A Z I N G XD
