Mash one banana with a fork. Add 3 tsp cashew butter, 100ml plant based milk, 10ml oil and 1 tsp apple cider vinegar and mix it well.
In another bowl, add 90g spelt flour, 1 tsp baking powder, ½ tsp cinnamon, ¼ tsp vanilla and one pinch of salt and mix it. Add the milk mixture (step 1) to the flour and stir until you have a smooth batter.
Put half of the batter in another bowl and add 2 tsp cocoa and 1 tsp maple syrup. Stir again until the cocoa powder has dissolved. Add a dash of milk if necessary.
Preheat and grease the waffle iron. Now alternate one tablespoon of the light and one tablespoon of the dark batter on the waffle iron and let the waffle bake out. With the square waffle irons, they took about 5 minutes.
Lastly top as desired. I used more cashew butter, melted chocolate and buckwheat seeds.
